125 g dark chocolate
300 ml double cream
1 tbsp vanilla paste
1 tbsp maple syrup
50 g shortbread to serve

Break the chocolate into squares or small chunks and melt the chocolate in a microwave for 30 seconds at a time until just melted then leave to cool slightly at room temperature.
Pour the cream into a mixing bowl and use a kMix Hand Mixer to whisk to soft peaks.
Pour the vanilla paste and maple syrup into the cream, start whisking, then drizzle the chocolate in. Whisk to stiff peaks, making sure the chocolate is fully incorporated.
Scoop the cream into bowls or pipe into glasses and serve immediately with shortbread biscuits crumbled over... or chill in the fridge for later. Serves 6
